PM Sous Chef
Butcher Paper BBQ is seeking a qualified individual to fill
our PM Sous Chef position. The PM sous chef is responsible for managing all
kitchen operations after 1 p.m., including:

Manage the preparation of all menu items and ingredients, ensuring quality and safety standards, and reducing waste

Manage staff involved in food preparation, ensuring timeliness of tasks being completed, quality of work, and adherence to task list

Coordinate with shift lead as needed to ensure proper operation during the shift

Assist Executive Chef in tracking inventory volumes and managing organization of storage spaces including kitchen shelving, basement, shed, and walk-in

Assist Executive Chef in placing all orders for food and supplies by generating order lists when asked

Coordinate with Catering Director and Executive Chef to ensure all catering needs for ordering or food prep are handled

Maintain proper cleanliness and operation of the kitchen and pit area daily. Perform regular cleaning on smokers and alert the Executive Chef or Owner when equipment needs repair
Preferred candidates will have 3-5 years’ experience in a professional kitchen as
a line cook or higher and at least one year experience as a Sous Chef or
equivalent. This role requires a High School Diploma or equivalent and the
candidate must have an maintain a ServSafe Management Certification.
Sous Chef duties may require working overtime and helping to
periodically cover shifts in any position of the restaurant. Candidate must have availability between 1
p.m. and 10 p.m.
Training Pay is $15 per hour plus tip share; Starting Pay is
$17 per hour plus tip share. The role is eligible for a pay raise and health
insurance benefits after 90 days. Benefits increase to 80 hours of PTO after
one year.
Line Crew (Part-time)
Members of Butcher Paper’s Line Crew are on the front line in customer service and satisfaction. As a member of the Line Crew, you will be able to interact directly with customers, ensuring that their experience is the best possible that we can provide. You will be preparing meals with a focus on top quality ingredients, preparation, and presentation. Line Crew position has a wide and varied list of responsibilities that also comes with an equally vast number of opportunities for growth, both personally and professionally. Once you are trained, you will be able to accept shifts in Catering and Food Truck events as well, when they are available. Tasks include:
- Assembling customer orders
- Reading and fulfilling kitchen tickets quickly and accurately
- Following written recipe instructions precisely
- Using knives to cut brisket, ribs, and chicken
- Washing dishes
- Preparing, stocking and cleaning the make line area
- Cleaning and maintaining the dining room and bathroom
- Taking customer orders on the point of sale system and operating a cash register
This is a part-time position, and
you must be available to work evenings and Saturdays, along with occasional
morning/opening shifts. Hours will vary, but we will work with you and your
schedule to ensure your workload is appropriate for your needs.
Starting
pay (including training) is $11 per hour, plus tips. Once trained, you will be
eligible for Catering and Food Truck shifts. Starting pay for Catering and Food
Truck is $15 per hour, plus any applicable tips.
Pit Crew (Part-time)
Members of Butcher Paper’s Pit
Crew are the ones responsible for ensuring that every bite of food that comes
out of the Kitchen meets our high standard.
As a member of the Pit Crew, you will be responsible for cooking all our
BBQ proteins as well as making all our made from scratch sides and sauces. You
will be working directly with our Pit Boss and Executive Chef to execute a
daily prep list.
A Pit Crew position has a specific
role that requires acute attention to detail and a drive for perfection. You
will be working with tools and equipment such as knives, torches, fire, heavy
equipment, and large cases that are dangerous and require safety measures to be
taken at all times.
As a part-time Pit Crew member,
you will be trained and expected to be able to perform the following tasks:
- Trimming and prepping meats, including brisket, pork butts, ribs, and chicken
- Building and maintaining a wood fire
- Operating an offset smoker
- Reading and following recipes with precision
- Logging in and breaking down truck deliveries
- Cleaning and maintaining Kitchen and Pit area
- Washing dishes
This is a part-time position, and
you must be available to work evenings and Saturdays, along with occasional
morning/opening shifts. Hours will vary, but we will work with you and your
schedule to ensure your workload is appropriate for your needs. A Pit Crew
position also requires that you are able to lift and carry up to 100 pounds, bend,
twist, reach, and stand on your feet for an entire shift.
Training
pay is $11 per hour, plus tips. Once trained, you will be eligible for a pay increase.
Starting pay after training is $13 per hour, plus tips.
