Back in 2015, Mark Coxwell ignited Butcher Paper BBQ with an unwavering love for traditional wood-smoked BBQ. Armed with a borrowed smoker, he dedicated his spare time to perfecting rubs, sauces, and smoking techniques, sharing his creations with friends and local events in Opelika.

Mark's ambition didn't stop there. In 2016, he crafted his own smoker, aptly named Riker, from propane tanks and basic tools. As his ‘cue gained popularity at concerts and events, Butcher Paper BBQ evolved into a mobile food unit. By early 2018, Butcher Paper had become a sensation, not just in the food truck scene but also in local barbecue circles, prompting plans for a brick-and-mortar restaurant.

On September 7, 2018, Butcher Paper BBQ proudly opened its doors at 128 Columbus Parkway. Our menu boasts mouth-watering brisket, pulled pork, ribs, chicken, plus homemade sides like our legendary smoked mac and cheese. Whether you dine in, opt for takeout, or have it delivered to your door, we've got your barbecue cravings covered. Plus, we offer catering for any occasion, big or small, and can even roll up to your event with our trusty trailer!

Since opening our doors, we’ve expanded our capacity with the addition of LaForge, our second smoker, ensuring even more smoky goodness for our patrons.
